Stump grinding uses a machine to chew the stump 6-12 inches below ground level. Roots stay in place and decompose underground over 5-10 years. Full stump removal digs out the entire root ball — more thorough, but 3-5x the cost and leaves a large crater you'll need to fill. For 80% of homeowners, grinding is the right answer.
Standard grinding goes 6-12 inches below grade — deep enough to sod, plant grass, or mulch over the spot. If you're planning a patio, foundation, or pool over the spot, you'll want full removal instead.
Some species (Bradford pears, silver maples, cottonwoods) can keep sending up small sprouts for a year or two after grinding. These can be cut down at ground level or treated with stump killer. Most species don't sprout at all.

By default we backfill the hole with the chips (slowly settles over 6-12 months). If you want them removed, that's typically a $50-$100 add-on. Chips also make great mulch if you have garden beds.
